Thanksgiving Family Special-One Night Free!

Let us cook for your family this year.  Book Thanksgiving night for at least two nights ($220/person per night, $144 children ages 6-12) and come Wed. night for free dinner by 8pm, drinks and cocktails, lodging, and breakfast the next morning.  Nightly rate always includes all meals, cocktails, appetizers, horseback riding, and cabin accomodations.  Hurry, we only have a couple cabins left!  Families must have at least 3 people in their party over age 5 to qualify.

Highland Ranch Makes The News

Last month Karen Rifkin of  The Ukiah Daily Journal    visited Highland Ranch.  She wrote a wonderful article entitled "A Steward of the Land" published on October 21st that begins like this:  "I awoke this morning in total silence, snug in my king size bed and simply and tastefully appointed cabin and opened my eyes towards a large window...to see a backdrop of Redwoods...I have rarely seen such beauty in my adult life...We toured the family style kitchen where Lupe, the cook, was preparing our dinner...The best was yet to come as Caroline and I made our way in the dark to the dock of a smaller pond bordering the cabins...I stared in wonder at the countless number of stars overhead.  Living in town, I cannot remember the last time I have seen this always-available celestial view"  We have several copies, so come to the ranch and read the rest of the article.  Thanks Karen!

Autumn German Cabbage

This simple yet delicious dish can be served as a side or combined with ground beef or sausage as an entree.  It's sure to get your German craving out!

Serves 4-6

Combine in a soup pot on medium heat:

Less than 1/4 cup vegetable oil

1 small white onion, chopped

1/2 pound ground beef or sausage (optional)

Continue cooking 5-10 minutes, then add:

1 head white cabbage, chopped

 1/4 cup water

1 TB allspice ground or berries, crushed

1 TB coriander ground or berries, crushed

Cover and cook 20-30 minutes, stirring occasionally

Add:

6 TB red wine

1/4 cup red wine vinegar

4 TB Apple cider vinegar

1/2 can tomato paste

Stir and continue cooking until all ingredients are mixed well and it begins to thicken.

 Garnish with sour cream and parsley
