Rob's Nutella Cookie Recipe

Our first montly recipe went over very well in March. This week, guests were very excited about Rob's mastery of the cookie arts. Here is his favorite original creation.

Makes 48 cookies

Ingredients:

3 cups all purpose flour
¾ teaspoon baking soda
½ teaspoon salt
¾ cup brown sugar
¾ cup sugar
1 ½ sticks butter, softened
1 ¼ cups Nutella
2 eggs
1 teaspoon vanilla extract
1 ½ cups hazelnuts, chopped and lightly toasted

Preheat oven to 350 degrees.
Mix the flour, baking soda and salt in a medium mixing bowl.
In the mixing bowl of a stand mixer with the paddle attachment, mix the sugars with the
butter and the Nutella. Beat until fluffy, about 4 minutes.
Add the eggs one at a time, then add the vanilla.
Slowly add in the flour mixture just until well combined.

Roll dough into 1 1/2-2 inch balls. Press them firmly into chopped hazelnuts, but not enough to flatten. Place onto lightly greased cookie sheet, or sheet pan lined with parchment paper.

Bake for 14 minutes, or until small cracks form on tops of cookies. Place cookies on cooling rack for 5 minutes before serving.
