Last Few Private Ranching Opportunities

Calling all Highland Ranch Fans! We offer something very special here at the Ranch; it's called "Private Ranching". This allows our guests to book the entire ranch with their whole family, business, or friends for a family reunion, corporate retreat, wedding, birthday party, anniversary or other special event.

This year, our available dates for Private Ranching fall mostly in the months before and after the summer season. March through May and September through November still have open weeks.

The Highland Yurt is a great space for family or corporate meetings, and there are many great activities available on the ranch that foster positive relationship building. These include horseback riding, hiking and walking, swimming, yoga, fishing, and other fun passtimes. There is a minimum of sixteen people required to fill all the cabins. Please contact us if you are interested.

Introducing: The HR Garden!

Joanna Gaines, the new Ranch Manager and granddaughter of owner George Gaines, has made great progress on her off-season project of giving life to the kitchen garden. To experiment with Lunar Gardening, we are going to plant hundreds of fruit, herb, vegetable and flower seeds the day after the next full moon.

We plan to maximize our space by vertical gardening techniques, and ensure the beauty and safety of our harvests by growing organically.

We invite you into our garden to explore, learn, relax and meet our plants and composting woms.

CHEESY HERB BISCUITS

The Ingredients Are:

3 cups all purpose flour
3 ½ teaspoons baking powder
1 teaspoon salt
5 Tablespoons cold unsalted butter, cut into pieces
1 cup milk
½ cup heavy cream
1 cup grated sharp cheddar cheese
2 teaspoons granulated garlic
1/3 cup finely chopped parsley and/or chives

• Preheat oven to 450 degrees
• Mix the flour, baking powder and salt in a medium mixing bowl.
• Using a pastry cutter or two knives, blend in pieces of butter to the flour, until the mixture resembles course breadcrumbs.
• Using a wooden spoon, gradually incorporate the milk and cream into the flour, until all dry ingredients are mixed and the sides of the bowl are fairly clean.
• Fold in remaining ingredients until evenly mixed.
• Loosely roll into 2 inch balls and place them on ungreased cookie sheets, about 1 ½ inches apart.
• Bake in oven, rotating and turning sheets halfway through, for 11-14 minutes, until lightly browned and crispy.

 

Wild Oats Band at Highland Ranch

For Valentine's Day Weekend this last February, our most favorite local folk band came up to relax with their significant others and casually play beautiful music around the ranch. We hope to have them up on a regular basis during the summer, to grace us with their lovely presence that adds so much to the Highland Ranch atmosphere. Hooray for finger pickin'!
